Stuart Forster suggests an tasty yet easy Christmas pizza recipe, using a tortilla wrap as a base, to use up dinner leftovers.
Looking for leftover Christmas recipes to use up food? This easy Christmas pizza recipe is something you can prepare in a matter of minutes. It’s a way of using up turkey, stuffing, cranberry sauce and other seasonal ingredients.
Rather than spending time making dough for the pizza base, I make use of pre-bought wraps in this recipe. Why? Haven’t you already spent enough time in the kitchen cooking in preparation for Christmas? A wrap pizza means you can have a quick, easy-to-cook meal.
This recipe requires just five minutes of preparation and eight to ten minutes in a fan-assisted oven set to 180°C (that’s the equivalent of Gas Mark 4 or just under 360F).
Of course, if you’re a pizza aficionado you may want to prepare a proper base and possibly even a traditional tomato-based sauce. However, my sauce for the base is simply two tablespoons of cranberry sauce mixed with tablespoons of ketchup. That makes enough to make two two tortilla wrap pizzas.
That base may not sound appealing but don’t knock it until you’ve tried it — the result is delicious. The sweetness of the sauce complements the savoury ingredients of the toppings.
Easy Christmas pizza recipe ingredients
As this is a Christmas use-up meal you can make use of pretty much any leftover that you have available in your fridge. Simply chop it and chuck it on top of the base! My experiments included using Brussel sprouts, bacon and walnuts; they all turned out to be tasty.
For my most successful Christmas pizza-style snack I used the following ingredients to top two wraps:
200 grams (8 ounces) of roast turkey
100 grams (4 ounces) of sausage stuffing
1 onion (medium)
100 grams (4 ounces) cheddar cheese
50 grams (2 ounces) Stilton cheese (more if you enjoy rich, deep flavour)
Two tablespoons of ketchup
Two tablespoons of cranberry sauce
Fresh chilly (optional)
Ground cinnamon (optional)
Method for cooking Christmas pizza recipe
Follow these steps to make my pizza-style dish using Christmas leftovers:
One – Mix the ketchup and cranberry sauce in a bowl then spread it on top of your wraps which should be laid out on baking trays.
Two – Chop the turkey, stuffing and onion and share it across each of the wraps.
Three – Grate or chop the cheese and sprinkle over your Christmas style pizza.
Four (optional) – If you like spice add thinly sliced fresh chilly and/or sprinkle with ground cinnamon.
Five – Bake for eight to 10 minutes or until ready. The wrap doesn’t crisp up, so be careful as you transfer your Christmas pizza to your plate.
The result is a quick and easy meal that can be enjoyed in front of the fireplace while watching Christmas movies or binging on your favourite television series.
